need:
1 red onion sliced thinly
1 courgette, trimmed and in small chunks
1 aubergine sliced
1 red pepper, deseeded and cut into chunks
2 garlic cloves, with skin on, left whole
2 tbsp olive oil
200g penne pasta
basil for decoration and taste
make:
heat oven to 200C
put all veg, garlic and olive oil in roasting tin, cover all veg with oil and season
toast for 20 mins, add tomatoes, roast for another 10 mins
cook pasta but keep about 5 tbsp of water when you drain it
put pasta and remaining water into oven tray and toss with veg in oil
add basil and squeeze over the yummy gooey garlic
oh and this serves 2 people 🙂 enjoy!
